Ingredients
- Whole ears of corn
- Pay Dirt Rub
- Chopped fresh herbs & chili (optional)
- Sliced chili or chili flakes (optional if you like things hot!)
- Butter
Description
This is a real crowd pleaser and what’s more it's dead simple!
Directions
- 1. Pre-heat your Hark gas smoker to MED: 135-160°C (275-320°F).
- 2. Peel the outer leaves away from the corn and remove the inner fibres (set aside the corn leaves).
- 3. Place the corn in a clean bucket of cold water for at least an hour.
- 4. Remove the corn and drain.
- 5. Spread butter all over the corn and sprinkle with the BBQ rub.
- 6. Fold the leaves back over the corn and adhere with some cooking string if you like.
- 7. Place the corn in the smoker for 1 hour before serving.
