Ingredients

  • Oysters
  • Garlic and pepper (optional)
  • NEED
  • Light wood chips like beech

Description

When you next have some fresh oysters, considering smoking them, then storing them in reserved liquor and olive oil to eat over the week ahead.

Directions

  • 1. Preheat your Hark gas smoker to 90°C (195°F).
  • 2. Boil a large pot of water. Remove oysters from their shells and reserve the liquor.
  • 3. Place the oysters into the hot water.
  • 4. Stir them in the water so that they blanch evenly for 5-6 seconds.
  • 5. Remove from the water and place the oysters into the smoker for 25-30 minutes.
  • 6. Once cooled, store the oysters in a clean jar covered with olive oil.
  • 7. Pour the reserved liquor into the jar and if you wish, add some crushed garlic and pepper before sealing.
  • 8. Store in the refrigerator for up to 2 weeks.
