SMOKED CHILLI OIL AND SMOKED GARLIC OIL

Ingredients

  • Olive oil (or grapeseed oil)
  • Garlic Jalapeno Chili (Quantity of olive oil and garlic depends on the quantity of chilies you have and size of your pot. You will need enough oil to cover the chilies.)

Description

This is a highly versatile condiment that adds flavour to just any food. When next firing up your smoker, consider using free space to make smoky oils and use in your salad dressing, pizza bases or simple pasta sauce.

Directions

  • 1. Peel garlic cloves and / or cut jalapeno chilies in half.
  • 2. Place the garlic / chilies in a cast iron pot.
  • 3. Pour over olive / grapeseed oil and place in your smoker / off set smoker cooking chamber when cooking low and slow.
  • 4. The gentle heat will cook the garlic and chili whilst the smoke will infuse the oil.
  • 5. Allow to cool.
  • 6. Store in a sterile, airtight jar.
