Ingredients

  • 1 whole chicken
  • 2 litres of water
  • 2 tblsp salt
  • 1 tblsp honey
  • 1 tsp ground pepper
  • 1 tblsp oil
  • NEED
  • Chicken shears
  • Light wood chip flavour, such as apple
  • Large pot

Description

This is far better than any smoked chicken you buy at your deli. Just delicious and perfect for filling baguettes and sandwiches!

Directions

  • 1. Day 1 - Mix the water, salt, honey and pepper in a large pot to make a brine.
  • 2. Day 1 - Remove the chicken’s backbone and flatten (this will enable to chicken to cook more quickly).
  • 3. Day 1 - Submerge the chicken into the brine and refrigerate for 24 hours.
  • 4. Day 2 - Pre-heat your Hark gas smoker to MED (approx. 110°C).
  • 5. Day 2 - Drain the chicken and pour boiling water over the skin.
  • 6. Day 2 - Pat the chicken dry and rub with oil.
  • 7. Day 2 - Place inside the smoker at 110°C for 2 hours or until the internal breast temperature reaches 83°C (180°F).
  • 8. Day 2 - Rest the chicken for 10 minutes before serving.
