POULTRY BRINE

Ingredients

  • 1 litre water
  • 4-6 cloves garlic, sliced
  • 3 bay leaves
  • 3 sprigs of fresh thyme
  • 1 1 tblsp black peppercorns
  • ½ cup brown sugar
  • ¼ cup non iodised salt
  • OPTIONAL
  • 1 orange or lemon, sliced (if like some tang)
  • Additional fresh herbs, such as rosemary

Description

This is a terrific brine recipe for poultry. Play around with the ingredients, depending on what you have in the fridge!

Directions

  • 1. Boil the water and stir in the non-iodised salt until it has fully dissolved.
  • 2. Once the brine mixture has cooled, pour into a ceramic or glass bowl or pot.
  • 3. Add the poultry and ensure it is fully submerged in the brine.
  • 4. Place in the refrigerator overnight (12-24 hours for a whole turkey).
  • 5. Before commencing the cooking process, discard the brine and pat the poultry dry. Note that there is an increasing push to include Iodised salt in our cooking. Whilst this is a good initiative, iodised salt is not recommend for use in brines.
