Ingredients

  • Your own ham, or Pickled leg of pork (buy a nitrate cured or salt brined leg from your butcher)
  • NEED
  • Digital meat thermometer
  • Waxed paper
  • Aluminium foil
  • Fruit woodchips like apple

Why not try this very simple, old style country ham recipe

Directions

  • 1. Preheat your gas smoker to LOW 105°C -135°C.
  • 2. Smoke at LOW until the internal temperature of the ham reaches 70°C.
  • 3. Remove the ham from the smoker, serve hot or plunge into ice water to cease the cooking process. Cover the ham with waxed paper. Then cover the paper with a layer of foil.
  • 4. Place in the fridge and on the following day, you will have ham!
