BASIC BRINE

Ingredients

  • 1 litre water
  • 1 tblsp non-iodised salt

Description

Brining meat before smoking typically tenderises and adds flavour to meats, and, helps to reduce cooking time. This basic brine mixture can be flavoured with anything you like - such as crushed garlic, lemon, peppercorns, herbs, teaspoon o good curry paste, brown sugar, soy sauce or ginger.

Directions

  • 1. Boil the water and stir in the non-iodised salt until it has fully dissolved.
  • 2. Once the brine mixture has cooled, pour into a ceramic or glass bowl or pot.
  • 3. Add the meat and ensure it is fully submerged in the brine.
  • 4. Place in the refrigerator overnight.
  • 5. Before commencing the cooking process, discard the brine and pat the poultry dry.
  • 6. Note that there is an increasing push to include Iodised salt in our cooking. Whilst this is a good initiative, iodised salt is not recommend for use in brines.
