GAS SMOKER: BACON-WRAPPED SMOKED TROUT

Ingredients

  • 12 thin slices of bacon or speck
  • 2 whole rainbow trout about 500g (1lb)
  • 2 tblsp olive oil
  • 6 sprigs of fresh tarragon
  • Salt and freshly ground black pepper, to taste
  • NEED
  • Hark BBQ Grill Sheet or Baking Paper
  • Handful of fruitwood wood chips

Description

This classic trout dish marries succulent, fleshy trout with fabulous smoky bacon.

Directions

  • 1. Preheat your Hark gas smoker to HIGH: 160-180°C (320-356°F).
  • 2. Cook the bacon in a pan or on your BBQ hotplate for approximately 5-10 minutes.
  • 3. Allow the bacon to cool.
  • 4. Brush the inside and outside of each trout with 1 teaspoon of the olive oil, salt and peper.
  • 5. Stuff the insides with 3 sprigs of tarragon each.
  • 6. Arrange the 6 bacon slices on a cutting board, slightly overlapping each other.
  • 7. Position a trout at right angles at one end, then pick up the bacon to wrap the trout.
  • 8. Place the trout seam-side down inside the smoker on a Hark BBQ Grill Sheet or Hark BBQ Smoking Sheet (to stop it sticking). Smoke for approximately 15-20 minutes.
  • 9. Meanwhile, preheat your gas BBQ while the trout is smoking.
  • 10. Take the trout out of the smoker when the internal temperature hits 60°C (the BBQ Grill or Smoking Sheet is no longer required).
  • 11. Place the trout on your BBQ hotplate for 1-2minutes to crisp the bacon.
  • 12. Plate immediately and serve with a fresh garden salad.
