Ingredients

  • 40 large jalapeno peppers, whole
  • 250g cream cheese, brought to room temperature
  • 1 cup grated cheddar, parmeasan or Mozzarella
  • 1-1½ tsp BBQ Rub
  • 2 tblsp sour cream
  • Sausage mince

Description

This is simply a man-sized version of the Jalapeno Poppers recipe. When sliced through, the jalapeno forms the yoke and the crispy sausage meat, the egg white & shell.

Directions

  • 1. Refer the Jalapeno Popper recipe.
  • 2. Using whole seeded jalapenos, and the same Jalapeno Popper recipe (less the sliced bacon).
  • 3. Cover the each chili with sausage mince.
  • 4. Dust with the sausage meat encased popper with some BBQ rub.
  • 5. Smoke cook for two hours on the Hark Tri-Fire™ until the internal temperature reaches 65°C.
